100 Year Old Recipe! 1918 Salmon Loaf Recipe from the Metropolitan Cookbook This is an old school bare bones simple salmon loaf recipe that uses canned salmon. It is the classic style of recipe that extends simple less expensive ingredients to feed a larger number of people.

Ingredients:
1 cup flaked salmon
1 cup stale bread crumbs soaked in 1 cup scalded milk
1 tsp salt
½ tsp onion juice
2 eggs yolks
½ tsp lemon juice
2 egg whites stiffly beaten

Method:
Combine ingredients in order given, folding in the stiffly beaten egg whites last.
Drop mixture into a well greased and crumbed pan and bake in a moderately hot oven or steam the mixture.
The eggs may be omitted, using ½ cup less milk.

    This is great-t-t! Hilarious, dry wit, practicality w/intelligence. I made this yesterday, and put some soul in it. 2 cans of red salmon, sautéed green onion in butter, splash of pomegranate, matzos bread crumbs, a splash of pomegranate vinegar, ( I ran out of lemons oh well, tastewise it didn't show😋) Himalayan pink salt, a spinkle of blk.pepper like you mentioned, some garlic & onikn powder ,3 eggs, ( no I did not whip the whites) and buttered my loaf pan , popped it it the oven after mixing it all up at 350° for about 45 mins and it was💣💛💥 love in loaf!!!

    When I visited Louisville a few years ago to see a ratdog concert we did some touristy things including a local food tour and they talked about this snack/dip that they have been eating for generations they call benedictine basically cream cheese with a very small amount of finely diced cucumber and they specifically mentioned it needing onion juice, and that you used to be able to buy onion juice at the store.

    Back then they cooked on and a wood burning stove there was no temperature the more wood add the hotter it was if you wanted it not as hot you let the coals cool down so it was not so hot I do Dutch cast iron cooking all 5he time you can use the Dutch ovens like little ovens the more coals on top and the hotter it is inside

    Aha, there's the problem. The last line of the recipe says you were supposed to serve it with "white sauce". You'll just have to redo the video now so we can get Julie's reaction to salmon loaf with white sauce. 😉

    We had salmon loaf every Friday at my elementary school in the early 60s for lunch.scalloped potatoes, milk was 3 cents and fruited jello was the complete lunch. I still like salmon loaf to this day. Thanks for the upload. Great job!

    My grandma liked to make salmon loaf, unfortunately I hated it but I never had the heart to tell her. It might have been the fact that she left the bones in it? I would feed it piece by piece to her dogs when she wasn't looking…😉 miss you grandma!

    I found onion juice in a small glass bottle at a discount grocery store here in Albany Oregon. I find all kind of awesomely funny items at this place! I have never used it as I've never come across a place to use it so far, but if I ever do, I have it!
