Butter Bathed Filet and Lobster Surf & Turf
Recipe by Nathan Lippy

Time: 20 minutes
Servings: 4

Ingredients:
4, 6-8 oz. filet mignon
4 Lobster Tails
2 stick of unsalted butter
A few sprigs of fresh rosemary
A few sprigs of fresh thyme
2 cloves fresh garlic, rough chop
1 lemon
A handful of asparagus
2 pints mushrooms
Blackstone Steakhouse Seasoning
Olive oil

Directions:
1. Pre-heat the Blackstone Air Fryer to medium-high heat.
2. To prep the lobster, using shears, cut the top of the shell through the middle all the way to the tail leaving the last rib connected. Squeeze the shell so that the bottom section cracks and releases. While keeping the meat connected at the end of the tail, pull the lobster meat out and over the top of the cut shell. Using a sharp knife , make shallow cuts to create a “cross hatch” pattern on the surface of the lobster meat.
3. Heat one side of your griddle to medium and add a small sauce pot. Add the butter, herbs and garlic and melt.
4. Heat the other side of your griddle to high heat and add a drizzle of olive oil.
5. Season your steaks with Blackstone Steakhouse seasoning generously on all sides and cook on high heat for 2-3 minutes per side.
6. Add a bit of the melted butter over the tops of each lobster tail and season with Blackstone Steakhouse Seasoning. Place into the Air Fryer and cook for 6-7 minutes
7. Once the steaks are seared on both sides, submerge them in the herb butter. Be sure to coat on all sides then return to the griddle for another minute per side. Remove from the griddle and let rest them for a few minutes.
8. Add the asparagus and mushrooms to the griddle with a few shakes of Blackstone Steakhouse seasoning over the top. Add a bit of the herb butter and cook for 4-5 minutes.
9. To plate, add the steak to one side and a lobster tail to the other. Add the vegetables in the middle and drizzle a bit more butter over both the steak and the lobster.

    Everybody cooks differently. However, after viewing this video I noticed two cardinal rules abrogated when cooking filet mignon. ONE: if you want to retain as much moisture as possible, don't slice the meat. Contrary to popular opinion it does not add to the surface area of the cooked surface, it adds an immense pathway for juice to exit the filet. And TWO, stop patting the meat. You have made the medallion thinner for no apparent reason. You think remedial griddle technique is required here?

    I'm allergic to the lobster so not changing your gloves before touching the steak would have a bad reaction for me. Other than that I love the way the dish looks. The steak looks great and I will defiantly try you recipe.

    Maybe I should have got the air fryer. But at $250-$350 more I struggled to justify it. The drawers do look bigger than i realized where the 28 air fryer combo, the drawer just look small.
    Went for a premium 36 blackstone at lowes.

    I have been watching a ton of videos since getting my 28” combo air fryer in Dec. I have now only seen 2 of your videos and what you are doing with the butter is the simplest addition yet so overlooked. I saw the ribeye and I believe sirloin and those steaks looked amazing!

    I never thought about the air fryer. I just cut some lobster tails in half, down the middle. Then seared them on the griddle. Flipped them, shell down and finished by doming and steaming until the shells were red. Came out great.
